Most of the moms I know are always looking for simple, healthy and quick lunch ideas, so here is a great one! I personally can put so much thought into breakfast and dinner, but when it comes to lunch I am usually scrounging around the kitchen putting ingredients together to give my kids something they will enjoy and I will feel relatively good about. I came up with this turkey, avocado and bacon wrap and we are now eating these multiple times a week! They are a crowd pleaser – fast, healthy (if you get organic bacon) and really satisfying.
Start your bacon on a griddle or skillet and slice your avocado. Separate your turkey into small portions.
When the bacon is ready (not too crunchy or it will not wrap well), let is rest and cool on a paper towel. Lay bacon out on a plate, top with avocado and turkey and gently roll. Serve with some cut up veggies and a side of honey mustard or ranch! Yum!
