Life is just busy! For all of us. And even if we want to make everything from scratch every day of the week, the reality is that there are days that we just can’t. Thankfully, there are ways to make a really great meal, almost from scratch, giving your family that home cooked feeling, while accepting the fact that on certain days your time in the kitchen is restricted. This quick and easy chicken enchilada recipe is perfect for days that just seem a bit shorter than 24hrs.
You can always roast a whole chicken a day in advance, but if you are really crunched for time, get a rotisserie chicken and pull all the meat from the bones. Chop up into pieces.
For super soft tortillas, cook them over med-low heat on a skillet in coconut oil for about 5 seconds on each side. You will see the tortilla begin to bubble, then you know it is time to flip. When the other side bubbles lift it and place gently on a paper towel. The remaining tortillas can rest on top of the first one.
I buy both red and green enchilada sauce from Whole Foods. Its great! I have made my own, but since I have never seen Organic tomatillos I have decided its just not worth it to make this from scratch. This is one meal that I have resigned to using store bought sauce. Homemade sauce is just not that much better and this is my “time crunch” repipe after all.
So, I do 1/2 red and 1/2 green. The green tends to be too spicy for my little girl, but it’s my personal favorite, so everyone wins here.
Top with freshly shredded Cheddar
Cook on 350 for about 30min and turn on the broiler for perfectly browned cheese at the very end of the cooking time. Watch it while you broil and pull it out when it’s bubbly.
- 1 Rotisserie Chicken
- 2 Packets of Enchilada Sauce (red and green)
- 6 Tortillas
- 16oz of Cheddar or Monterey Jack Cheese
- Shred chicken and cut into small pieces
- Heat coconut oil in a skillet on med-low heat and fry tortillas for about 7 seconds on each side
- Pour enchilada sauce into pan
- Fill tortillas with chicken and wrap tightly
- Lay side by side in pan
- Cover with sauce and cheese
- Bake on 350 for 30min
- Broil for 5min until cheese is bubbly and browning
- Top with salsa, guacamole and sour cream
Make the salsa and guacamole ahead of time, so you have some fresh and ready to go! Top with sour cream and serve with a big salad.
