2 eggs - Beaten
¾ cup seasoned bread crumbs
½ cup Hunts spaghetti sauce flavored w/meat (comes in a can)
1 TABLEspoon minced fresh parsley
1 garlic clove – Minced
(add a couple more cloves if you LOVE garlic)
½ teaspoon dried oregano
¼ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon pepper
2 pounds lean ground beef
16 slices part-skim mozzarella cheese
3 slices of deli ham ½ inch thick
Cut your ham slices into cubed ½ inch pieces. Set aside.
In a bowl add the first nine (9) ingredients and mix well. Crumble up the ground beef and add to the mixture. Make sure to mix everything together well.
On a piece of wax paper roll out the meat with your hands to a rectangle shape that is approximately 12 long by 10 inches wide. Leaving about a ½ inch all the way around the meat, layer the meat with six slices of cheese, then place the ham (you may not need all of the ham) and then place six more slices of cheese on top of the ham. Roll up meat jelly roll style peeling away the wax paper from the meat. Seal seam and ends well. Place seam side down in a greased 12 inch x 9 inch x 2 inch baking dish.
Bake uncovered at 350 for 70 minutes or until no pink remains and a meat thermometer reads 160º. Top with remaining cheese and bake approximately 5 more minutes or until the cheese is melted. Let stand for about 10 minutes before slicing.
Heat up remaining spaghetti sauce and serve over the top of each slice along with a slice of garlic bread.
Tip: I usually use the left over ham in a tossed salad that I serve with the meat roll. |
