My family knows that I am 100% against fast food. I don’t eat it at any time or for any reason. And it’s been that way for about 13 years, maybe more. It’s a part of who I am. I am against it with every fiber of my being. Really! My philosophy is that it’s better to fast than eat fast food. If we are out and about, busy and need to eat I truly would prefer to skip the meal than pull into a…oh it pains me to even say the words on my blog, but here goes…McDonalds.
I am so happy to say that my precious Tirzah just turned 5 and has never eaten the stuff! That was my intention for all of my children, but one sad day my darling husband thought it would be fun to take Judah out for chicken nuggets. He was 4. David confessed later that he felt his stomach turn with every bite he watched Judah take. That was the one and only time; they have never returned.
I do understand that life is busy and eating healthy is time consuming! So, this is my version of fast food.
The Blended Salad! All the goodness of a salad in a small glass. Doesn’t that look good! But to eat all of these veggies could take 30min.
So put them in your blender, squeeze some fresh lime juice and throw in a jalapeño if you like a little kick.
Magic! So quick, flavorful and nutrients readily available for digestion – no chewing required. I’m not going to promise that you will like it the first time, but you will feel awesome that you had a super healthy meal in a time crunch. Then it will become your go-to on a busy day. And once in a while your brave little ones will take a bite. I always ask to see who is feeling adventurous! It is good for a laugh and “oohs and aahs” from the spectators.
- Handful of celery
- Handful of tomatoes
- Handful of Kale
- Small piece of onion (chives are yum too)
- Herbs - cilantro is a great one but I have used parsley also
- 1 clove of garlic
- 1 jalapeño
- Juice of 1 lemon or lime
- *You can of corse add or omit veggies based on your personal preference and what you have in your fridge. I do recommend using a heavy green as a base (kale, spinach or chard).
- Pile all ingredients in a VitaMix (blender or food processor) and blend for about 30 seconds.
