Some of the best marriage advice I received as a young bride was to always do my food shopping on Friday, so that my husband would have a variety of food available to him on the weekend. Seems to be that men typically like to have food in front of them multiple times a day. Three square meals just doesn’t cut it. They want snacks, football food, something sweet and chips to crunch on! So you’ve got to be prepared.
In all fairness, my mother-in-law warned me that my husband was constantly eating as a child and he is still prone to open the door of the fridge and stare. I do my best to have something available for him to grab that is tasty, quick and healthy. And we all know that anything Daddy eats the kids are going to want also, so unless you want everyone snacking on a hideous bag of Fritos you’ve got to have a better alternative ready in advance!
For all of the above reasons, guacamole has become a weekend staple in our house. Sometimes I do it chunky, sometimes super smooth. Trying to keep him on his toes.
I’ll share the chunky today and set you up with the smooth soon!
- Chunky Guacamole
- 2 avocados
- Juice of 1 fresh lemon
- 1 freshly pressed clove of garlic
- 1 small handful of chopped cillantro
- ¼ of a red onion diced
- Sea salt to taste
- Mash all ingredients in a bowl with a fork until desired consistency is reached!
Serve with tortilla chips and by all means switch from white corn, to yellow, to blue. Variety is the spice of life, after all.
