Every once in a while, something comes around that changes your life, dramatically and for the better. Finding out that I was pregnant with twin boys was one of those moments for me. As I looked at those two little craniums snuggled together on the screen I laughed with tears streaming down my cheeks. The mix of emotions I felt in that moment are hard to verbalize, but it’s s moment I will never forget the intensity, surprise and JOY of.
And life as I know it as never been the way it was before these sweet little bundles of delicious baby love! Ok, back to the coffee…this is about coffee after all. Being pregnant with twins was what caused me to discover Bulletproof coffee. My midwife encouraged me to up my daily calorie count to 4000 per day! Yes, like a Dallas Cowboys linebacker, 4000 calories! In my quest to add calories (and healthy fats) into my diet I was eating spoonfuls of coconut oil throughout the day and my good friend Jeana encouraged me to try Bulletproof coffee.
- In a Vitamix or blender...
- 2 cups of freshly brewed coffee (always brew with filtered or spring water for best flavor)
- 1tbsp unrefined organic coconut oil
- 1tbsp pastured butter (Kerry Gold or Organic Valley has grass fed)
- Sweetener to taste (I prefer raw honey, but Stevia, maple syrup, agave...all good options!)
- Mix on medium until it is light golden brown.
There is an entire life-stye around this idea of being “bulletproof” that Dave Aspery began with the coffee concoction he created and sells. I encourage you to check out the real deal (as amazing as this is I am sure his is SO much better!), but the basic concept is oil (I use coconut), butter (pastured), sweetener and whatever else makes you happy to spice it up.
I make this every day and some days I put in a little cinnamon or nutmeg. Some days I add a tablespoon of cocoa, but every day I enjoy this decadent and satisfying beverage.
And the amazing thing about ingesting good fats in this quantity is it actually helps you burn fat more effectively. I lost the baby weight from my twins faster than my two big kids (and I had gained much more!) and I think Bulletproof coffee was a huge contributing factor.
